Bacon-Wrapped Stuffed Dates

1 package thick-cut bacon

1 package blue cheese crumbles

1 16-ounce package Medjool dates

  1. Preheat oven to 400° F. If dates are not pitted, remove pits by hand. You can either push them out using your fingers or cut down the side of a date and then just pull out the pit. Prepare as many dates as you would like.

  2. Slice bacon in half widthwise so it can wrap around a date one and a half times.

  3. Stuff dates with desired amount of cheese. Any cheese will work, and good blue cheese will be even better, but cheaper crumbles will have the same effect at a fraction of the cost. I like to stuff the dates quite full, but it is entirely up to you and your companies’ attitudes to the stinky stuff.

  4. Taking a stuffed date and half slice of bacon, wrap the bacon around the middle of the date and secure with a toothpick.

  5. Place dates on an oven-safe tray and into oven. Cook at 400° F for 5 to 10 minutes to crisp the bacon, then lower to 350° to cook the bacon. Cook between 10 and 20 minutes longer, or until bacon is cooked to your preferences.

  6. Let cool. Serve with toothpicks still in place as an appetizer, or simply remove the toothpicks and eat them all yourself. Good for a week in the fridge.
